Gracious Hospitality Management’s 550 Madison project is their most ambitious to date: a multi-level, 15,000-square-foot dining destination inside the iconic landmark Sony building. The project brings together three distinct concepts — the second New York location of the Michelin-starred COTE Korean Steakhouse, an all-day multi-bar and dining concept, Bar Chimera, and an intimate sushi restaurant led by Michelin-starred Chef Masahiro Yoshitake, Sushi Yoshitake. Designed by Rockwell Group, with Yoshio Itai collaborating on the sushi concept, 550 Madison is set to redefine immersive, transportive dining in Midtown Manhattan.
Job Summary:
Polishers are dynamic hospitality and maintenance professionals responsible for ensuring that each piece of glassware, flatware, and plate ware is inspected for flaws and polished to a shine before re-entering service into the hands of our customers in perfect condition. Polishers work with all members of the Back of House and Front of House Service team to ensure a smooth continuation of service.
Essential Job Duties & Responsibilities:
Job duties and responsibilities include, but are not limited to the following:
Receives all clean glassware, flatware, plate ware, and other service equipment from the Porters in the dish pit and inspects for flaws before polishing. Removes cracked or defective items from service and informs management. Polishes all clean glassware, flatware, plate ware, and other service equipment to a perfect shine. Ensures no watermarks, stains, lint, or other debris remain on product. Regularly polishes and maintains metallic grill rims, grill equipment, and kitchen pots and pans using metal polish. Maintains cleanliness and appearance of the dish pit area at all times. Daily cleaning of ice machines, coffee station, water station, and refrigerators.Completes all assigned side work related to set up and breakdown of dish pit area. Maintains all tools of the position including specialty glass polishing cloths. Reports to each scheduled shift on time, in uniform, and ready to work.
Assists other stations or areas of the restaurant when requested by management.
